## About this wine

Bistro Louis Séverine is a collaborative natural winemaking project founded by Séverine Perru, former wine director at The Ten Bells in NYC, and Louis Broderick of Basket Range Wine in South Australia. After making wine across Australia and the Jura, the duo established their project in Alsace in 2023. Fruit for this cuvée is sourced from organic grower Alexis Dietrich in Dambach-la-Ville, from high-altitude steep slopes next to the Frankstein Grand Cru. The wine is dedicated to Julien Fournelle, a beloved friend and beekeeper from the Jura who passed away in 2022.

## Interesting facts

- Only 880 bottles were produced for the 2024 vintage.
- Dedicated to Julien Fournelle, a close friend and Jura beekeeper who passed away in 2022.
- Co-founder Séverine Perru was previously an entomologist before managing legendary NYC wine bar The Ten Bells.

## Food pairing

High acidity and granitic minerality slice effortlessly through fresh goat cheese and raw seafood, while the low alcohol level respects delicate Asian herbal flavor profiles.

## Wine making process

Grapes are hand-harvested from certified organically farmed vines growing on pure granitic soils. In the cellar, low-intervention techniques are followed using spontaneous fermentation with native yeasts. Whole clusters undergo a gentle seven-day maceration before aging in neutral old oak barriques. The wine is bottled unfined and unfiltered without any added sulfur dioxide.
