## About this wine

Julius Höfflin represents the third generation at Weingut Höfflin in Baden, where his family has practiced organic viticulture since 1974. Following studies in Geisenheim and winemaking experience in Burgundy, the Jura, and New Zealand, Julius returned to the volcanic slopes of Kaiserstuhl to launch his low-intervention experimental range. Grown on micro-plots within warm south-facing sites overlaying volcanic substrata, this cuvée is an unusual German expression of the Nebbiolo variety.

## Interesting facts

- Nebbiolo is exceptionally rare in Germany, grown here on warm volcanic soils in Baden's Kaiserstuhl region.
- Achieves complete phenolic maturity at a remarkably low 11% ABV.
- Julius Höfflin practices agroforestry, planting up to 30 trees and shrubs per hectare to boost biodiversity.

## Food pairing

This wine's bright acidity and mature, assertive tannins require dishes rich in natural fats, proteins, or savory complexity. Rich game birds like duck and goose soften the structural frame, while earthy wild mushroom dishes complement its volcanic, herbal background.

## Wine making process

Crafted from hand-harvested fruit, winemaking relies on 100% whole-cluster native yeast fermentation. A brief maceration of one to two weeks utilizes gentle pump-overs with light manual punch-downs towards completion. Aging takes place over 10 to 12 months in a combination of used oak barrels and glass carboys. Bottled unfined, unfiltered, and with minimal added sulfites.
