## Wine making process

Organically dry-farmed grapes are hand-harvested, foot-stomped, and pressed within an hour of pick. The juice ferments spontaneously with native yeasts in a combination of Georgian clay qvevri and stainless steel tanks. Winemaking follows a strict zero-intervention ethos with no added sulfites, fining, or filtration. The wine matures in stainless steel followed by one year of aging in bottle prior to release.
