## About this wine

Weingut Salwey is located in Oberrotweil in the Kaiserstuhl region of Baden, Germany, with viticultural roots dating back to the 18th century. Under the direction of Konrad Salwey, the estate is renowned for redefining Kaiserstuhl Pinot Noir through early selective harvesting, complete fermentation to dryness, and minimal oak intervention. Sourced from old-vine plots on loess and weathered volcanic soils, this VDP.Gutswein incorporates declassified grapes from top classified sites across Oberrotweil.

## Interesting facts

- The oak barrels used for aging are crafted from timber harvested in Weingut Salwey's own Kaiserstuhl forests.
- The Kaiserstuhl is Germany's warmest wine region, formed by an ancient extinct volcanic complex.
- This wine undergoes spontaneous fermentation with wild yeasts and is bottled completely unfiltered and unfined.

## Food pairing

Spätburgunder pairs wonderfully with poultry, pork, and savory dishes highlighting earthy elements like forest mushrooms. Its vibrant acidity cuts cleanly through rich meats, while smooth tannins complement roasted game and aged cheeses without masking subtle nuances.

## Wine making process

Hand-selected grapes are de-stemmed and undergo spontaneous open-vat mash fermentation using wild yeasts for approximately 23 days at temperatures between 25°C and 33°C. The wine is aged for 12 months in French oak barriques (3rd to 5th fill), made from oak harvested in Salwey's own local Kaiserstuhl forests. It is bottled without filtration or fining to preserve its natural structure and complexity.
