## About this wine

Weingut Salwey is a historic, family-owned estate situated in Oberrotweil am Kaiserstuhl in Baden, Germany, managed by third-generation winemaker Konrad Salwey. The estate focuses exclusively on Burgundy grape varieties cultivated on volcanic and calcareous loess soils. Adhering to a philosophy of generous time and minimal intervention, Salwey crafted this terroir-driven cuvée to showcase the tension, depth, and smoky volcanic minerality unique to the Kaiserstuhl region.

## Interesting facts

- Grown on unique volcanic rock and calcareous loess soils in the Kaiserstuhl sub-region.
- Aged for 18 months on fine lees and bottled completely unfiltered.
- Winemaker Konrad Salwey trained at prestigious German estates like Müller-Catoir before taking over the family winery.

## Food pairing

The vibrant acidity, textural weight, and subtle oak influence make this wine a versatile match for rich fish dishes, buttery emulsified sauces, tender white meats, and melted or soft cheeses.

## Wine making process

Grapes are selectively harvested by hand and subjected to whole-cluster pressing. Fermentation takes place in French oak barriques, followed by full malolactic fermentation. The wine matures for 18 months on its fine lees in large neutral oak casks and stainless steel tanks before being bottled unfiltered to preserve its intrinsic structure and purity.
