## About this wine

Domaine YoYo was established in 2005 by Laurence Manya Krief (nicknamed YoYo), who left a career in the Paris high-fashion industry to make natural wine in Roussillon. She acquired small, abandoned, century-old vine parcels on steep coastal terraces in Banyuls-sur-Mer. The cuvée name KM31 refers to the 31 kilometers that separate these high-altitude vineyards from the cellar in Montesquieu-des-Albères, which she shares with her partner Jean-François Nicq. The vines are rooted in black schist soils overlooking the Mediterranean Sea and are farmed entirely by hand and animal traction.

## Interesting facts

- The name KM31 represents the 31 kilometers between the coastal vineyards in Banyuls-sur-Mer and the shared cellar.
- Winemaker Laurence Manya Krief transitioned to winemaking after a successful career in the Paris fashion industry.
- The steep, non-mechanizable schist terraces are cultivated entirely by hand and worked using horses and mules.
- Yields are extremely low at around 5 hectoliters per hectare from 80 to 100-plus year old vines.

## Food pairing

This energetic natural red pairs exceptionally well with rich meats, game, and herb-seasoned Mediterranean dishes. Its lively acidity and refined tannin structure cut through fat while the savory herb notes in food complement the wine's inherent Mediterranean character.

## Wine making process

Harvested manually in small 13 kg crates, the century-old vines yield an extremely low 5 hectoliters per hectare. The whole grapes undergo a 12-day semi-carbonic maceration in stainless steel tanks, fermented spontaneously with indigenous yeasts. The wine ages for 6 to 7 months in neutral four-year-old French oak barrels. It is crafted with zero added sulfites and bottled unfined and unfiltered to preserve its natural purity.
