## About this wine

Pierre-Olivier Bonhomme took over full ownership of the estate in 2013, having worked alongside Thierry Puzelat in their renowned joint négoce project. Sourced primarily from a single parcel named Les Automnes in the Touraine region, the vines grow on calcareous clay-limestone soils with an average age around 45 years. The cuvée name 'KO In Côt We Trust' is a lighthearted play on 'In God We Trust,' combining the local grape name Côt with the winemaker's nickname.

## Interesting facts

- The cuvée name is a playful pun combining the regional grape name Côt with winemaker Pierre-O's nickname.
- Sourced from the Les Automnes parcel, where select vine sections date back as far as 1905.
- Crafted without added sulfur during fermentation, unfined and unfiltered for a pure expression of Loire terroir.

## Food pairing

This natural Côt pairs exceptionally well with duck, lamb, and earth-driven mushroom dishes. Its bright acidity cuts through rich fats, while its supple tannins complement savory proteins without overpowering subtle herbal or gamey accents.

## Wine making process

The wine undergoes whole-cluster fermentation with a 15-day maceration period, relying entirely on native yeasts for spontaneous fermentation. Vinified naturally without added sulfur, fining, or filtration, it is aged in 500-liter wooden demi-muids for 12 to 18 months before bottling.
