## About this wine

Established in 1960, Koenig holds the proud distinction of being France’s first-ever kosher wine cellar. Located in Alsace—a region with a deep, historic Jewish heritage—Koenig was born from a desire to craft premium, estate-bottled wines that strictly adhere to kosher dietary law while fully expressing the regional terroir. Today, the winemaking is overseen by the highly respected Willy Gisselbrecht winery in Dambach-la-Ville, ensuring the portfolio is treated with the exact same precision as the estate's famous Grand Cru wines.

## Food pairing

The high, bracing acidity of this dry Riesling acts as a palate cleanser, cutting beautifully through rich, oily fish and balancing the heat of spicy Asian dishes. Its mineral tension and clean profile also complement salty, tangy cheeses like feta or goat cheese without overwhelming them.

## Wine making process

The grapes are strictly hand-harvested from vineyards with predominantly granite subsoil and an average vine age of 30 years. Vinification involves a slow, temperature-controlled fermentation in temperature-regulated vessels using selected Kosher-certified yeasts. To retain the high-toned aromatics and mineral purity of the Riesling grape, the wine is aged entirely in stainless steel vats with zero oak contact. The wine is certified Kosher, Kosher for Passover, and Mevushal (flash pasteurized).
