## About this wine

Domaine Kumpf et Meyer was established in 1997 by Sophie Kumpf and Philippe Meyer in Rosheim, northern Alsace. In 2010, winemaker Julien Albertus took over management and cellar duties, converting the estate to certified organic and biodynamic farming. The cuvée name 'Hédoniste' translates to 'The Hedonist,' representing a release crafted purely for pleasure and uninhibited enjoyment. Sourced from clay-limestone soils across small parcels in Rosheim and Molsheim, this low-intervention bottling blurs the boundaries between rosé, white, and skin-contact wine.

## Interesting facts

- Pinot Gris is a pink-skinned grape, allowing skin maceration to create a glowing natural rosé without adding red grapes.
- The wine is produced with zero added sulfites, unfined, and unfiltered under the Restons Nature series.
- Winemaker Julien Albertus converted the estate to biodynamic farming after taking over management in 2010.

## Food pairing

The vibrant acidity and subtle skin-contact phenolic texture complement rich pork, oily fish, and earthy mushroom flavors, while balancing gentle spice and creamy cheeses.

## Wine making process

Harvested manually from biodynamically farmed vineyards, the 2024 vintage underwent 18 days of skin-contact maceration with 90% de-stemmed grapes. Fermentation occurred spontaneously in the cellar using indigenous wild yeasts. The wine aged for 8 to 12 months in a combination of large neutral oak foudres and stainless steel tanks. Bottled under the Restons Nature series without fining, filtration, or added sulfites.
