## About this wine

Matías Riccitelli established his winery in 2009 in Luján de Cuyo, Mendoza. Known for pushing boundaries and celebrating Argentina's heritage varieties, the Kung Fu range focuses on minimal-intervention, natural winemaking. Criolla Chica, an ancestral variety originally brought to the Americas by Spanish missionaries, is revived here to showcase a lighter, fresh, and vibrant side of Argentine red wine.

## Interesting facts

- Criolla Chica is one of South America's oldest grape varieties, dating back over 400 years.
- The Kung Fu line is crafted without oak aging or added synthetic enological products.
- Matías Riccitelli's colorful comic-style labels are designed to reflect a modern, playful spirit.

## Food pairing

As a light-bodied red wine with vibrant acidity and soft tannins, this Criolla pairs wonderfully with lighter meats, charcuterie, and savory vegetable dishes. Served slightly chilled, its bright acidity cuts through light fats like pork, salmon, and mild cheeses without overwhelming the dish.

## Wine making process

Hand-harvested grapes are wild-fermented with indigenous yeasts in concrete vessels. The wine undergoes gentle extraction with short maceration to preserve delicate floral and red fruit aromatics while avoiding heavy tannins. Bottled without fining or filtration to retain its natural energy and purity.
