## About this wine

Matías Riccitelli is a dynamic winemaker in Mendoza, Argentina, known for pushing boundaries and rethinking traditional styles. The 'Kung Fu' range represents his exploration into natural, low-intervention winemaking. Sourced from high-altitude vineyards in Gualtallary, Uco Valley, this Pet Nat (Pétillant Naturel) is crafted from Pinot Noir grapes. It showcases a vibrant, energetic side of Mendoza, far removed from traditional heavy reds, focusing instead on freshness, purity of fruit, and ancestral methods.

## Interesting facts

- Crafted by Matías Riccitelli, one of Argentina's most innovative and rebellious modern winemakers.
- Made using the Méthode Ancestrale, the oldest method of sparkling wine production, predating the Champagne method.
- The grapes are sourced from Gualtallary, a high-altitude sub-region of Mendoza famous for its calcium carbonate-rich soils.

## Food pairing

The high acidity and refreshing effervescence of this Pet Nat make it an exceptional palate cleanser. It cuts beautifully through fried foods, balances spicy Asian dishes, and complements fresh, briny seafood or creamy goat cheeses without overpowering them.

## Wine making process

Produced using the Méthode Ancestrale. The Pinot Noir grapes are harvested early to preserve high natural acidity. Fermentation begins spontaneously with wild yeasts in concrete vats. Before fermentation is complete, the wine is bottled under a crown cap, allowing the remaining sugars to ferment in the bottle, trapping the carbon dioxide to create natural carbonation. The wine is sold unfiltered and unfined, with no added sulfur, leaving the natural sediment (lees) in the bottle.
