## About this wine

Matías Riccitelli Wines was founded in 2009 in Las Compuertas, Mendoza, representing Argentina's dynamic new-wave winemaking movement. The Kung Fu range represents a minimal-intervention initiative aiming to strip winemaking down to its rawest, most energetic roots. Harvested from high-altitude vineyards situated 1,400 meters above sea level in Gualtallary, Uco Valley, this natural orange wine highlights the distinct limestone-rich soils and extreme mountain climate of the region.

## Interesting facts

- Aged on the skins for 8 months in clay amphorae without any added sulfites.
- Sourced from high-altitude vineyards planted 1,400 meters above sea level in Gualtallary.
- Crafted using a minimal-extraction infusion technique with 50% whole-cluster fermentation.

## Food pairing

The wine's subtle phenolic skin tannins, vibrant mountain acidity, and herbal character complement earthy vegetarian dishes, rich roasted poultry, and savory goat cheeses.

## Wine making process

Grapes are hand-harvested in 20 kg crates and transferred gravity-fed into small clay amphorae without mechanical pumping. Fermentation occurs spontaneously with indigenous yeasts at controlled temperatures between 16°C and 18°C, utilizing 50% whole clusters and 50% destemmed fruit. The wine undergoes gentle infusion maceration on the skins for 8 months in unlined clay amphorae with zero oak contact. It is bottled unfiltered, unfined, unstabilized, and without added sulfites.
