## About this wine

Jérôme Lambert, often dubbed the wizard of Anjou, began his winemaking journey in 2003 with just 0.2 hectares near Rablay-sur-Layon in the Loire Valley. Today, he farms 4.5 hectares of vineyard alongside a polyculture homestead with livestock. Lambert operates with a minimal-intervention ethos, producing micro-artisanal wines that reflect the sandy, clay, and schist soils of southern Anjou.

## Interesting facts

- Winemaker Jérôme Lambert began fermenting wine in his bedroom as a teenager from gleaned leftover grapes.
- Lambert avoids oak entirely, viewing wood barrels as an unnecessary additive that distracts from pure site expression.
- This natural pét-nat spends two full years aging on its lees prior to disgorgement, giving it unusual depth.

## Food pairing

High natural acidity and lively effervescence cut effortlessly through rich fats like pork rillettes and cured meats. The bright berry character and saline minerality complement seafood like salmon tartare and prawns, while fresh goat cheese mirrors the energetic acidity of this zero-dosage rosé.

## Wine making process

L'Air de Rien is a sparkling rosé produced using the ancestral method (pétillant naturel). Gamay and Grolleau grapes are directly pressed and spontaneously co-fermented with indigenous yeasts in neutral tanks, completely avoiding oak. Bottled under crown cap, the wine aged on its lees for two years prior to disgorgement, with zero added sulfites, no fining, and no filtration.
