## About this wine

La Grange 476 was founded in 2019 by Dimitri Vétois and Marion Valverde, who established their estate in an ancient winemaker's home in Menétru-le-Vignoble, within the historic Château-Chalon zone of the Jura. Dimitri brought formal viticultural training from Beaune and international winemaking experience, while Marion specialized in draft-horse traction. Together, they farm a tiny four-hectare estate with a deep commitment to biodiversity and natural methods. L’Angevré is a single-plot cuvée from the 'Angevré' lieu-dit in Nevy-sur-Seille. Because the estate's topped-up (ouillé) style of Chardonnay does not fit the oxidative-focused local appellation laws, it is proudly bottled as a Vin de France, showcasing the pure, non-oxidative potential of Jura's unique terroirs.

## Interesting facts

- The estate's steep vineyards are plowed using two Comtois draft horses, Soferino and Khir, to preserve soil structure.
- Due to low nitrogen in the 2022 grapes, the wild fermentation was so slow it required a full two years in barrel to complete.
- Though located in the Château-Chalon region, this topped-up white is bottled as Vin de France to bypass oxidative appellation rules.

## Food pairing

This natural Chardonnay thrives alongside rich, textured dishes that can match its density and high acidity. The electric acidity cuts through heavy fats like butter, cream, and cheese, while the wine's deep mineral core and subtle yeast autolysis notes harmonize beautifully with the nutty, savory elements of aged mountain cheeses and roasted shellfish.

## Wine making process

The grapes for L’Angevré were hand-harvested on September 7, 2022, from 25-year-old vines grown on Bajocian limestone scree and Lias gray marl. The vineyard is plowed exclusively using two Comtois draft horses to prevent soil compaction. In the cellar, the winemaking is defined by a non-interventionist approach: whole-cluster direct pressing is followed by spontaneous fermentation using only native yeasts. Due to the extreme heat of the 2022 vintage, low nitrogen levels in the grapes resulted in an exceptionally slow, natural fermentation. The wine was aged on its fine lees for 24 months in old, neutral 500-liter demi-muids and 228-liter Burgundy barrels. It was bottled unfined and unfiltered, with absolutely no added sulfur dioxide.
