## About this wine

Domaine Les Terres Promises was established in 2004 by Jean-Christophe Comor, a former political advisor in Paris who left politics to craft low-intervention wines in Provence. Located in La Roquebrussanne near the Massif de la Sainte-Baume, the estate focuses on traditional varieties and expressive regional terroir. First produced in 2007, L'Apostrophe was created as the domain's flagship cuvée to offer a character-filled alternative to commercialized regional styles.

## Interesting facts

- Founder Jean-Christophe Comor abandoned a career as a Paris political advisor in 2004 to start making wine in Provence.
- The cuvée includes 30% Carignan, an unusual grape choice for modern Provence rosé blends that adds distinct structure.
- Vineyards are situated at 400 meters altitude on Jurassic dolomitic limestone soils 30 kilometers from the Mediterranean.

## Food pairing

The wine's bright acidity, saline mineral undertones, and slight phenolic texture pair seamlessly with olive oil, herbal notes, and fresh seafood from traditional Mediterranean cuisine.

## Wine making process

Grapes are hand-harvested early in the morning from 20 to 30-year-old vines planted at 400 meters elevation on clay-limestone soils. Yields are kept low at 30 hectoliters per hectare. The fruit undergoes direct pressing immediately upon arrival at the cellar, followed by spontaneous fermentation with wild yeasts in stainless steel tanks. Winemaking proceeds with minimal intervention, avoiding heavy fining or animal products and utilizing low added sulfites.
