## About this wine

La Bergerie is a white wine from the Vin de Savoie appellation, produced by Domaine du Gringet from 100% Gringet grapes. This indigenous variety is primarily cultivated in the Savoie region. The wine originates from the Ayze appellation, specifically from vineyards located on south-facing foothill terroirs characterized by yellow marl and limestone scree soils. Domaine du Gringet emerged following the passing of Dominique Belluard, the founder of the renowned Domaine Belluard, and is now managed by a team committed to preserving the estate's heritage and promoting the Gringet grape through a philosophy of minimal intervention and respect for terroir. 'La Bergerie' is notable as the estate's sole blended cuvée.

## Interesting facts

- Gringet is a grape variety found almost exclusively in Savoie.
- This is the only blended cuvée from the new Domaine du Gringet.
- The estate continues the legacy of the iconic Domaine Belluard.
- Vineyards are on south-facing slopes with limestone and marl soils.

## Food pairing

The wine's bright acidity and minerality cut through the richness of oily fish and creamy sauces, while its subtle herbal notes complement dishes seasoned with fresh herbs. The wine's complexity can stand up to dishes with moderate protein and fat content.

## Wine making process

The winemaking for 'La Bergerie' begins with gentle pressing of the Gringet grapes over 4-7 hours, followed by a 24-hour static settling. Fermentation is initiated spontaneously using indigenous yeasts. The wine is then aged for nine months on its fine lees, with two-thirds maturing in ovoid concrete vats and one-third in stainless steel vats. A further ten months of bottle aging precedes the wine's release. The winemaking approach is characterized by minimal intervention, including limited sulfur additions and aging in neutral containers.
