## About this wine

La Boutanche is an innovative collaborative project initiated in 2012 by U.S. natural wine importer Selection Massale alongside prominent artisanal growers across France. The goal was to produce pure, highly drinkable natural wines packaged in approachable one-liter screw-cap bottles at accessible prices. Winemaker Olivier Minot, working out of Domaine des Charbonnières in southern Beaujolais, served as the inaugural producer for the line. His vines, situated in clay-limestone and granitic soils, benefit from organic and biodynamic viticulture.

## Interesting facts

- La Boutanche was created by importer Selection Massale to offer pure, accessible natural wines in 1-liter screw-cap bottles.
- The fun label features an illustration of a pig in a Hawaiian shirt enjoying a glass of red wine.
- The grapes are harvested entirely by hand from 90-year-old Gamay vines in southern Beaujolais.

## Food pairing

The light body, high natural acidity, and low tannin profile of this un-oaked Gamay make it exceptionally versatile at the table. High acidity cuts through rich poultry fat and cured meats while complementing tomato-based sauces. Low tannins ensure the wine will not clash with delicate meats or create bitterness when served slightly chilled.

## Wine making process

Crafted from hand-harvested grapes sourced from 90-year-old vines, this wine undergoes semi-carbonic whole-cluster fermentation driven exclusively by native yeasts. Vinification and aging take place in concrete tanks over roughly six months to preserve fresh fruit purity without oak influence. The wine is bottled unfined, unfiltered, and with zero added sulfur dioxide.
