## About this wine

La Fage is crafted by Matthieu Cosse and Catherine Maisonneuve, who established their estate in 1999 with a mission to redefine the Cahors appellation. Located in Lacapelle-Cabanac, the estate is fully biodynamic. This cuvée is a brilliant expression of Malbec grown on the clay-limestone slopes (causses) of Cahors, showcasing a modern, elegant, and terroir-driven approach to a historically rustic appellation.

## Interesting facts

- Matthieu Cosse is a trained oenologist and former professional rugby player.
- The estate has been certified biodynamic by Demeter since the mid-2000s, pioneering natural viticulture in Cahors.
- La Fage is sourced from 30-year-old Malbec vines grown on high-altitude limestone plateaus.

## Food pairing

The robust structure, firm tannins, and vibrant acidity of this Cahors Malbec require rich, savory dishes. High-protein meats like beef and lamb soften the wine's tannins, while earthy components like mushrooms complement its rustic, terroir-driven character.

## Wine making process

The grapes are harvested by hand and fully destemmed. Fermentation takes place in temperature-controlled concrete vats using indigenous yeasts. The wine is aged for approximately 12 to 18 months in oak barrels (mostly used) and concrete tanks to preserve the purity of the fruit and soften the tannins without imparting heavy oak flavors. It is bottled unfined and unfiltered with minimal sulfur additions.
