## About this wine

Château Yvonne La Folie is a 100% Cabernet Franc from the Saumur-Champigny appellation in France's Loire Valley. The estate, with a history dating back to the 16th century, is now managed by Mathieu Vallée, who upholds a commitment to organic and biodynamic farming practices. The 'La Folie' cuvée originates from vines aged 15 to 50 years on clay and limestone soils in Champigny. The estate's winemaking philosophy prioritizes minimal intervention, utilizing native yeasts and bottling wines without fining or filtering.

## Interesting facts

- Farmed using biodynamic principles since 2012.
- Bottled unfined and unfiltered.
- Vines range from 15 to 50 years old.
- Minimal sulfur is used in production.

## Food pairing

The wine's medium body and present acidity make it versatile. Its fruitiness and subtle peppery notes complement the richness of proteins like lamb and duck, while its structure can stand up to heartier dishes. The limestone-driven finish offers a refreshing counterpoint to fatty or savory elements.

## Wine making process

The 2023 Château Yvonne La Folie is produced from 100% Cabernet Franc grapes hand-harvested from vines aged 15 to 50 years on clay and limestone soils in Champigny. Vinification begins with native yeast fermentation in concrete vats for approximately three weeks, with some portions fermented as whole clusters. Malolactic fermentation is then carried out. The wine matures for 12 months in wooden vats, including foudres and barriques. It is bottled with minimal sulfur, unfined and unfiltered.
