## About this wine

Domaine La Grange 476 is the project of Dimitri Vetois and Marion Valverde, who settled in the Jura region of France in 2019. Their home and cellar are located at house number 476 in Menétru-le-Vignoble. This specific cuvée, L'Angevré, is a 100% Chardonnay from the Angevré plot in Nevy-sur-Seille. Despite its location within the historic boundaries of prestigious Jura appellations, the wine is bottled as Vin de France. This choice allows the winemakers the freedom to produce their wines in an 'ouillé' (topped-up) style, as opposed to the oxidative 'sous voile' style typically associated with Château-Chalon. The vines are 25 years old and farmed using organic and biodynamic principles, with soil tilling done exclusively by draught horses. The 2022 vintage was marked by a sunny and hot year with heatwaves, followed by beneficial rains in July and August, leading to excellent maturity.

## Interesting facts

- The '476' in the producer's name refers to their house address in Jura.
- Soil is tilled exclusively by draught horses to protect vineyard microbiology.
- This wine is bottled as Vin de France to allow for a non-oxidative winemaking style.
- The wine is made with absolutely zero added sulfur.

## Food pairing

This bone-dry, high-acidity Chardonnay with its pronounced minerality and subtle nutty notes pairs beautifully with delicate seafood and poultry. The wine's taut structure cuts through richness and complements subtle sauces, while its saline character enhances the natural sweetness of shellfish. Aged cheeses with nutty profiles are also excellent companions.

## Wine making process

The 2022 L'Angevré Chardonnay is hand-harvested from the Angevré plot on September 7th. The whole clusters undergo direct pressing, and spontaneous fermentation begins in used neutral oak barrels without commercial yeasts. The heatwaves of the 2022 vintage led to slow and laborious fermentations due to depleted natural nitrogen levels in the grapes. The wine is crafted with zero inputs, meaning no added sulfur (SO2), no commercial yeasts, no enzymes, and it is bottled without fining or filtration. It is aged for 24 months on its fine yeast lees in used neutral oak barrels and demi-muids.
