## About this wine

La Guita Manzanilla is a non-vintage, dry white fortified wine from Sanlúcar de Barrameda, Andalusia, produced by Bodegas de Hijos de Rainera Pérez Marín. The wine is made from 100% Palomino Fino grapes. The brand 'La Guita' was established in 1908 and is known for the string traditionally tied around its bottles. The winery has been part of Grupo Estévez since 2007. The wine is aged using the traditional solera system in American oak butts under a veil of flor yeast.

## Interesting facts

- The name 'La Guita' comes from local slang for cash, reflecting the founder's preference for immediate payment.
- La Guita is bottled six times a year to ensure peak freshness.
- It's a popular choice during Spanish festivals like the Feria de Sevilla.

## Food pairing

The wine's crisp acidity and saline notes cut through the richness of seafood and fried dishes, while its subtle almond and yeasty character complements charcuterie and nuts. Its dryness makes it an excellent palate cleanser.

## Wine making process

La Guita Manzanilla is produced from 100% Palomino Fino grapes harvested in Sanlúcar de Barrameda. The must is fermented in stainless steel tanks at controlled temperatures. Following fermentation, the wine is fortified to 15% ABV. It then undergoes aging in American oak butts using the traditional criaderas and soleras system for more than four years, maintained under a veil of flor yeast. The wine is bottled six times annually to ensure freshness. The solera system is extensive, comprising approximately 15,000 to 20,000 butts.
