## About this wine

La Sœur Cadette was created by Valentin Montanet as a négociant extension of his family's organic estate, Domaine de la Cadette, based in Vézelay, Burgundy. By partnering with dedicated organic growers in the Mâconnais region, Valentin crafts authentic regional Burgundy wines that reflect low-intervention principles. The 2025 vintage represents a classic return to energetic, balanced cool-climate Chardonnay.

## Interesting facts

- Created by Valentin Montanet as a natural extension of Domaine de la Cadette in Vézelay.
- Includes a tiny splash (~2%) of Chardonnay Musqué, a rare aromatic field-blend clone.
- Aged 95% in stainless steel and 5% in new oak barrels used primarily to cure wood for estate cuvées.
- Bottled completely unfiltered with minimal sulfur additions.

## Food pairing

The lively acidity and mineral tension cut through rich seafood and creamy fresh goat cheeses, while its medium body easily accommodates delicate poultry and subtle butter sauces without being overwhelmed.

## Wine making process

Grapes from 45-to-55-year-old organic vines are hand-harvested and vinified using native yeasts in temperature-controlled stainless steel tanks. The wine undergoes full malolactic fermentation and ages on fine lees for 7 to 8 months, predominantly in stainless steel (95%) with a small portion (5%) in new oak barrels. It is bottled unfiltered with minimal added sulfur.
