## About this wine

La Sorga was established in 2008 by Antony Tortul in Montagnac, Languedoc. Operating as an artisan negociant, La Sorga focuses on sourcing grapes exclusively from organic and biodynamic plots across Southern France. Tortul works with over 40 distinct parcels of ancient, often neglected vines to produce radical, zero-additive natural wines that reflect their unique terroirs. L'intravineuse represents a cuvée made from low-yielding old vines grown on Villafranchian pebbles and limestone sands.

## Interesting facts

- Founder Antony Tortul pivoted to winemaking after surviving a chemical plant explosion in Toulouse in 2001.
- The name L'intravineuse translates to 'intravenous', humorously referencing pure, unadulterated grape juice.
- Grapes are harvested from ancient vines aged between 40 and over 100 years old with extremely low yields.

## Food pairing

The elevated acidity and skin-contact structure of this natural white allow it to cut through rich fish oils and aged cheeses while complementing complex aromatic spices in Thai and North African cuisine.

## Wine making process

The grapes undergo a spontaneous fermentation utilizing indigenous yeasts. Whole-cluster destemmed skin maceration occurs in stoneware jars (garres) and stainless steel tanks for a period ranging between 21 and 65 days. The wine ages for 9 months in tanks and stoneware jars before being bottled without fining, filtration, or added sulfur dioxide.
