## About this wine

Antony Tortul established La Sorga in 2008 in Montagnac, Languedoc, after studying chemistry in Toulouse and pivoting to viticulture following the 2001 AZF factory explosion. Operating as a natural wine producer and micro-négociant in the Hérault Valley, Tortul works exclusively with organically and biodynamically farmed old-vine plots. The estate focuses on expressive, minimal-intervention cuvées sourced from varied terroirs of basalt, clay-limestone, and schist.

## Interesting facts

- Founder Antony Tortul pivoted from chemistry to winemaking following the 2001 AZF factory explosion.
- Yields across La Sorga's vineyards are extremely low, averaging only 15 to 23 hectoliters per hectare.
- The wine is bottled completely unfined and unfiltered without any added sulfites.

## Food pairing

The pronounced acidity and textured skin-contact grip cut through rich white meats and fatty fish, while the vivid tropical and herbal aromas complement spicy and aromatic dishes seamlessly.

## Wine making process

Grapes are harvested by hand in small 15 kg crates from low-yielding vines. Vinification takes place in Montagnac using ambient indigenous yeasts with no temperature regulation. The process combines direct pressing with skin contact maceration of the white grapes. Aging takes place in stainless steel tanks and neutral containers for approximately eight months before bottling unfined, unfiltered, and with zero added sulfites.
