## About this wine

The Lambert Chardonnay 2021 is a 100% Chardonnay from the Yarra Valley, Victoria, Australia. Producer Luke Lambert follows a minimalist, hands-off winemaking philosophy, focusing on purity and site-driven characteristics. The grapes are sourced from a high-altitude, east-facing section of the Denton Vineyard, grown in thin granitic soils on vines approximately 19-22 years old. Farming practices are described as 'practicing organic'. The wine is produced in small batches, with a total production of around 500 cases.

## Interesting facts

## Food pairing

The wine's medium body and vibrant acidity make it a versatile partner for a range of dishes. Its minerality and subtle savory notes complement seafood and poultry, while its structure can cut through richer sauces and stand up to earthy flavors like mushrooms.

## Wine making process

The Lambert Chardonnay 2021 is produced using 100% Chardonnay grapes. The fruit is pressed as whole bunches and undergoes wild fermentation. Following fermentation, the wine is matured for approximately 8 months in seasoned French foudres, which are large format oak barrels (2000-liter or larger, 30+ year old). Minimal sulfur is used, with a Total SO2 of 80 ppm. Production volumes are limited to around 500 cases.
