## About this wine

Fratelli Cavallotto is a historic estate located in Castiglione Falletto, in the heart of the Barolo zone. Established in 1928, the estate is renowned for its traditional winemaking philosophy and its monopole vineyard, Bricco Boschis. This Langhe Nebbiolo is crafted from younger vines grown on the estate's prized slopes, offering a vibrant yet structured expression of the Nebbiolo grape that mirrors the complexity of their Barolo bottlings but with earlier accessibility.

## Interesting facts

- Sourced from the legendary Bricco Boschis estate, the same hill that produces Cavallotto's world-renowned Barolo wines.
- Cavallotto was one of the first estates in Castiglione Falletto to bottle and market their own wines under their family name in 1948.
- The estate practices organic farming and has avoided chemical herbicides and pesticides since the 1970s.

## Food pairing

Nebbiolo's high acidity and firm tannins require dishes with rich proteins, fats, and earthy flavors to soften the wine's structure. Earthy components like mushrooms and truffles mirror the wine's savory undertones, while the fat in red meats cuts through the prominent tannins.

## Wine making process

Sourced entirely from estate-owned vineyards in Castiglione Falletto. The grapes undergo temperature-controlled fermentation with native yeasts in stainless steel tanks, accompanied by a maceration period of around 15-20 days. The wine is aged for approximately 12 to 18 months in large Slavonian oak casks (botti) of various sizes, preserving the purity of the fruit while gently softening the Nebbiolo tannins before bottling.
