## Food pairing

## Wine making process

The G.D. Vajra Langhe Nebbiolo 2023 undergoes fermentation for up to 26 days with indigenous yeasts, followed by spontaneous malolactic fermentation. A gentle and long maceration is employed to preserve the wine's lift and energy. Approximately one-fifth of the fruit may be whole-cluster fermented. The wine is then aged for about 6 months in stainless-steel tanks to maintain its freshness. Bottling for the 2023 vintage occurred on April 30th, 2024.
