## Wine making process

The Langhe Nebbiolo 2023 is produced from hand-harvested grapes. Fermentation takes place in stainless steel tanks with temperature control, utilizing indigenous yeasts and spontaneous fermentation. The 'delestage' technique is used during maceration, which lasts around 20 days, to extract color while maintaining fragrance. Following fermentation, the wine undergoes aging for 5-6 months in stainless steel tanks, followed by a further 3 months of bottle aging before release. The estate practices sustainable and eco-friendly viticulture, including integrated pest management and reduced pesticide use.
