## Interesting facts

- Garnacha vines are over 60 years old.
- Vineyards are situated above 1000 meters elevation.
- Soils are a mix of slate, quartz, and granite.
- The wine is naturally fermented with indigenous yeasts.

## Food pairing

The wine's medium-plus body and firm tannins are well-suited to complement the richness of proteins like lamb, pork, and game. Its vibrant acidity cuts through fatty elements, cleansing the palate, while the mineral undertones resonate with earthy flavors found in mushrooms and aged cheeses.

## Wine making process

The winemaking process for Las Iruelas involves hand-harvesting Garnacha grapes from high-altitude vineyards. Fermentation is carried out using natural yeasts in open vats with whole clusters, followed by a maceration period of two months. The wine then undergoes aging for 16 months in a combination of 500-liter French oak barrels, concrete tanks (ranging from 7HL to 14HL), and foudres. The vineyard practices are in conversion to biodynamics.
