## About this wine

Domaine Nøvice was established by Yves Roy in Poligny, Jura, after working alongside Valentin Morel at Domaine Les Pieds sur Terre. The estate name reflects a humble, inquisitive approach to natural winemaking. Following catastrophic late-spring frosts in 2024 that severely damaged his Jura vineyards, Yves launched 'Opération Antigel,' collaborating with certified organic and biodynamic Chardonnay growers in Beaujolais. This special cuvée represents solidarity and creative adaptation in response to extreme climatic challenges.

## Interesting facts

- Created under 'Opération Antigel' after 2024 frosts destroyed Yves Roy's Jura estate crop.
- The name translates to 'The Juice of Others' Madness' in honor of the Beaujolais growers who shared grapes.
- Fermentation pressure control was achieved in partnership with local microbrewery Brasserie Atmosphère.

## Food pairing

High natural acidity and vibrant effervescence cut through rich fats, fried coatings, and creamy textures. The bright citrus profile enhances raw shellfish and tangy fresh goat cheese without overpowering delicate delicate flavors.

## Wine making process

Organically farmed Chardonnay grapes were directly pressed in whole clusters. Fermentation was initiated spontaneously using indigenous yeasts. The wine finished fermentation under pressure in temperature-controlled tanks at a local microbrewery using the ancestral pet-nat method to capture naturally occurring fine bubbles. Unfined, unfiltered, and crafted without added sulfur dioxide, dosage, or commercial yeasts, the wine was preserved in canned format to retain fresh carbonation.
