## About this wine

Domaine Batard Langelier was founded in 1910 by Denis Batard in the Nantes region of the Loire Valley. Today, third-generation winemaker Jérémie Batard leads the estate with a plot-by-plot approach that highlights local bedrock variations. Positioned in Maisdon-sur-Sèvre between the Sèvre Nantaise and Maine rivers, Le Moulin de Gustais comes from 40-year-old certified organic vines rooted in metamorphic gneiss subsoils.

## Interesting facts

- The wine is fermented in traditional glass-lined underground cement tanks typical of the Muscadet region.
- Grown on 40-year-old organic vines rooted in metamorphic gneiss bedrock near the Atlantic Ocean.
- Winemaker Jérémie Batard trained at the legendary Domaine de la Pépière before returning to his family estate.

## Food pairing

The high, mouthwatering acidity and crisp saline persistence cut cleanly through rich shellfish and delicate fresh cheeses. Salinity in the wine mirrors raw oysters, while the lees-aged texture stands up to light grilled fish without overpowering delicate seafood flavors.

## Wine making process

The grapes are gently pressed using a pneumatic press followed by static cold settling. Spontaneous fermentation occurs with 100% indigenous yeasts in traditional glass-enameled underground cement vats. The wine ages 7 to 12 months on fine lees with regular stirring (bâtonnage) to build textural depth before being bottled unfined and unfiltered.
