## About this wine

Clos du Tue-Boeuf, located in the Loire Valley, is led by the Puzelat family and stands as one of the legendary estates of the French natural wine movement. Sourced from a single 1.4-hectare parcel on the north bank of the Cher River, Le Petit Buisson represents a textured, authentic expression of Sauvignon Blanc rooted in rich flint and clay soils.

## Interesting facts

- Petit Buisson translates to Little Bush and is considered the younger sibling to Tue-Boeuf's renowned Le Buisson Pouilleux.
- The Puzelat family has bottled fruit specifically from this single 1.4-hectare parcel since 2003.
- The front label features an iconic line illustration of a farmer guiding an ox cart.

## Food pairing

High natural acidity and a textured profile derived from short skin contact and fine lees aging make this wine an ideal partner for fresh seafood, raw fish, and tangy goat cheeses. The crisp salinity cuts cleanly through creaminess while enhancing delicate oceanic flavors.

## Wine making process

Organically farmed vines averaging 35 to 40 years of age are hand-harvested at full maturity. Vinification includes a short skin maceration of two to three days alongside whole-cluster direct pressing. Fermentation occurs spontaneously with indigenous yeasts in neutral wooden vessels without added sulfur, followed by six months of fine lees aging with regular stirring prior to bottling unfined and unfiltered.
