## About this wine

Domaine Rimbert was established in 1996 by Jean-Marie Rimbert on the schist-rich slopes of Berlou within Saint-Chinian in the Languedoc region of France. Operating with a low-intervention philosophy and certified organic viticulture, the estate focuses on expressing local terroir and natural fruit vitality. Named Le Petit Cochon Bronzé (The Suntanned Little Pig), this cuvée was created in a playful spirit as an ideal summer refreshment for those who do not have a pool, featuring a label illustration drawn by Jean-Marie Rimbert himself.

## Interesting facts

- The wine name translates to The Suntanned Little Pig and features a label drawn by winemaker Jean-Marie Rimbert.
- Created playfully as a summer thirst-quencher for people without a swimming pool.
- Undergoes 36 hours of skin contact, giving it a deeper copper-pink hue than traditional Provence rosés.

## Food pairing

The vibrant acidity and juicy berry fruit profile slice through rich fats in grilled pork and charcuterie while balancing soft spice notes in Mediterranean and North African dishes.

## Wine making process

The grapes are organically farmed on steep schist soils in Berlou and harvested entirely by hand at optimal ripeness. After immediate destemming and gentle pressing, the juice undergoes 36 hours of vat maceration with skin contact to achieve a rich copper-pink color and subtle texture. Fermentation occurs spontaneously using indigenous yeasts in temperature-controlled, subterranean stainless steel tanks with no oak contact. The wine is bottled following light filtration with minimal added sulfur.
