## About this wine

Domaine Fabien Jouves, also known as Mas del Périé, was established when Fabien Jouves took over his family estate in 2006 at age 22 in Trespoux-Rassiels, high on the slopes of Cahors. Certified organic and biodynamic, Jouves embraces natural, low-intervention practices alongside polyculture. Les Agudes is his flagship white cuvée, categorized as Vin de France because Cahors AOC regulations strictly cover red wines.

## Interesting facts

- Cahors AOC only allows red wines, so Fabien Jouves classifies his white cuvées as Vin de France.
- The estate practices polyculture, maintaining truffle groves, lavender fields, beehives, and native pigs alongside vines.
- Grown on high-elevation clay-limestone plateaus at Mas del Périé in Trespoux-Rassiels.

## Food pairing

High acidity and vibrant citrus notes in this crisp natural white wine cut through creamy goat cheeses and elevate delicate seafood dishes like oysters and ceviche. Crisp acidity acts as a palate cleanser against light fats while complementing tangy green elements.

## Wine making process

Sourced from high-elevation clay-limestone hillside plots with 20-year-old vines, grapes are harvested manually. Vinification is completely natural using indigenous yeasts. Whole clusters and destemmed grapes undergo direct pressing before fermenting in neutral concrete tanks. The wine ages briefly in concrete to retain primary fruit vitality and spontaneity, undergoing no fining or filtration, with minimal total sulfur added.
