## About this wine

Les Canons du Jean is a micro-estate in Jura's Arbois region, created by Julien Crinquand after returning to his family vines in 2016 following careers in insurance and tourism. Named in tribute to his grandfather Jean, whose portrait adorns the label, the domain operates under a strict natural ethos. La Cuvée du D'Jopin is sourced from the Les Bodines parcel on Bajocian limestone and marl soils in Les Arsures, representing a vibrant homage to regional heritage.

## Interesting facts

- The line 'Les Canons du Jean' honors Julien's grandfather Jean, who is pictured on every label in traditional country attire.
- In French vigneron slang, 'canons' refers to joyous, easily quaffable bottles of wine.
- Julien Crinquand trained under legendary Jura natural winemakers Philippe Bornard and Fabrice Dodane of Domaine de Saint Pierre.

## Food pairing

The wine's bright acidity and textured mineral weight handle rich white meats and creamy mushroom dishes effortlessly. Aged local cheeses like Comté resonate with its deep savory limestone character without dominating the delicate fruit.

## Wine making process

Farmed organically and biodynamically, 100% Chardonnay grapes are hand-harvested and directly pressed as whole bunches. Fermentation occurs spontaneously using native yeasts without additives or sulfur dioxide. The wine is aged for 24 months in neutral 500L and 700L oak barrels in an ouillé (topped-up) style to prevent oxidation, resulting in a pure, non-oxidative expression that is bottled unfined and unfiltered.
