## About this wine

Domaine Les Volets Rouges is a highly promising young estate in Beaujolais, founded in December 2022 by winemaking partners Antoine Vettes and Marie Aslanian. Located in the prestigious Fleurie AOC, the estate spans just 4.11 hectares across eight distinct parcels. The 2023 vintage of 'Les Déduits' represents the domain's historic maiden commercial harvest. The estate is dedicated to preserving old vines, with an average age of 60 years and some exceeding a century. These vines are planted on steep, escarped pink granite slopes where mechanization is impossible, requiring traditional animal traction and manual labor. The artistic label, designed by French artist Bélonie Ovize, captures the vibrant, living energy of this young estate's debut.

## Interesting facts

- The eye-catching label was custom-painted using acrylics by French artist Bélonie Ovize.

## Food pairing

This light-to-medium-bodied Gamay thrives on its high acidity and low tannins, making it exceptionally food-friendly. It pairs beautifully with lean meats like poultry, pork, and veal, where its bright acidity cuts through moderate fats without overpowering the dish. The earthy undertones of old-vine Gamay complement mushroom-forward dishes, while its vibrant red fruit notes mirror sweet-savory elements like cherry reductions or spiced vegetarian tajines.

## Wine making process

The winemaking process at Domaine Les Volets Rouges is guided by a strict non-interventionist philosophy. The 100% Gamay grapes are hand-harvested from certified organic and biodynamically farmed vineyards. In the cellar, fermentation occurs spontaneously using only indigenous yeasts. To preserve the delicate fruit and avoid over-extraction, the wine undergoes minimal pumping over. Aging takes place in a combination of concrete tanks, stainless steel, and old, neutral French oak demi-muids (at least four fills old). The wine is bottled unfined and unfiltered, with no added sulfites during vinification and only a micro-dose added at bottling if necessary.
