## About this wine

Domaine Les Dolomies was established in 2008 by Céline Gormally in Passenans, Jura, with support from Terre de Liens, and was later joined by her husband Steve. Renouncing official AOC constraints in 2017, the domain bottles all cuvées under Vin de France to retain artistic freedom in natural winemaking. The cuvée 'Bordel C'est Bon' is named in tribute to their late friend Gabi, a national newspaper cartoonist whose illustration and signature catchphrase grace the label.

## Interesting facts

- The name translates colloquially to 'Damn, that's good!' as a tribute to late cartoonist friend Gabi.
- The domain left the Côtes du Jura AOC in 2017 to bottle under Vin de France for winemaking freedom.
- Donkeys and horses are used for vineyard labor on the steep plots of this boutique estate.

## Food pairing

The lively acidity and silky, low-level tannins of natural Trousseau cut through rich game birds and pork fat while remaining light enough to balance raw beef tartare and charcuterie without overpowering the food.

## Wine making process

Crafted from organically and biodynamically farmed Trousseau grapes grown on Triassic marl soils in the Les Combes plot. The grapes are hand-destemmed and undergo spontaneous fermentation with indigenous yeasts in an entirely SO2-free process. Maceration spans one to three weeks before aging for nearly a year on fine lees in seasoned Meursault oak barrels and stainless steel vats. Bottled without fining or filtration and with minimal sulfur added at bottling.
