## About this wine

Domaine des Marnes Blanches was founded in 2006 by young couple Pauline and Géraud Fromont. Both grew up in Jura winemaking families and met while studying oenology in Dijon before returning home at age 20 to purchase land in Cesancey and Sainte-Agnès. The estate takes its name from 'marnes blanches' (white marl), the signature marl soil type of their region in the Sud-Revermont.

## Interesting facts

- Founded by Pauline and Géraud Fromont when they were just 20 years old.
- Named after white marl, the signature soil type of their estate vineyards.
- Crafted in an 'ouillé' or topped-up style to preserve pure fruit freshness rather than oxidative notes.
- Bottled unfined and unfiltered with minimal total sulfur additions.

## Food pairing

The high, electric acidity and chalky mineral drive of this topped-up Jura white slice through rich, creamy dishes like classic local chicken stews or aged mountain cheeses, while remaining delicate enough to elevate fresh raw or grilled seafood.

## Wine making process

Crafted from 35-year-old vines grown on grey and blue marl topped with fossilized limestone. Whole-cluster pressing is followed by spontaneous fermentation with indigenous yeasts in neutral wooden vessels, undergoing full natural malolactic fermentation. The wine is aged ouillé (topped-up) for 10 to 11 months on fine lees without bâtonnage in neutral large oak foudres and old casks, then bottled unfined and unfiltered.
