## About this wine

Domaine de Pajot is a family-run estate located near Eauze in the Gers department of Southwest France. Managed across generations by the Barreau family, the estate produces high-quality organic and biodynamic table wines rather than directing yields solely to Armagnac distillation. The 'Les Quatre Cépages' cuvée highlights Gascony's traditional white grape varieties, which the family affectionately nicknamed the 'Four Musketeers'.

## Interesting facts

- The four grape varieties in the blend are playfully nicknamed 'The Four Musketeers' by the winemaking family.
- Domaine de Pajot incorporates agroforestry and winter sheep grazing directly within their biodynamic vineyards.
- The estate has been certified organic since 2001, making them a long-standing pioneer of sustainable viticulture in Gascony.

## Food pairing

The vibrant, high acidity and crisp citrus profile of this dry Gascon white cut through delicate seafood, fresh cheeses, and light vegetable dishes while effortlessly complementing citrus vinaigrettes.

## Wine making process

Grapes are harvested by hand at peak ripeness and fermented separately in temperature-controlled stainless steel tanks to preserve fresh aromatics. Malolactic fermentation is intentionally avoided to maintain crisp natural acidity. The wine undergoes brief aging on fine lees in stainless steel before early bottling, remaining completely unoaked.
