## About this wine

Les Valseuses is a natural micro-négociant project founded by Antoine Le Court-Chedevergne and Julia Naar in Arbois, within the Jura region of France. Operating out of an 18th-century cellar in Les Planches-près-Arbois, they work with organic and biodynamic growers to create expressive, low-intervention natural wines. Every cuvée is named after a song or piece of music that reflects the spirit of the wine.

## Interesting facts

- Every cuvée from Les Valseuses is named after a song or musical track.
- Antoine trained at world-renowned estates including Domaine L'Octavin and Château Latour.
- The label phrase 'Sans Poudre De Perlimpinpin' signifies zero added sulfites or enological additives.

## Food pairing

The skin-contact polyphenols and refreshing acidity in orange wine bridge the gap between red and white wine pairings. The subtle grip cuts through rich fats and washed-rind cheeses, while its savory, herbal complexity harmonizes with aromatic herbs and warm spices.

## Wine making process

Grapes are hand-harvested from organic and biodynamically farmed vineyards. The skin-contact process involves extended whole-cluster maceration submerged in juice for several weeks in non-reactive tanks. Fermentation occurs spontaneously using indigenous yeasts without added sulfur dioxide, chemical inputs, fining, or filtration.
