## About this wine

Domaine Les Vignes d'Olivier was established in 2014 by Olivier Cohen in Argelliers, in the Hérault region of Languedoc. After gaining experience at natural wine bars and interning with acclaimed vintners such as Antoine Arena in Corsica and Thierry Allemand in Cornas, Cohen acquired 7.5 hectares of organically farmed old vines. Argelliers is known for its cool microclimate and clay-limestone soils, positioned near prestigious Languedoc estates. Cuvée Spéciale is a multi-vintage release that harmonizes reserve harvests with younger grapes.

## Interesting facts

- Domaine Les Vignes d'Olivier was founded in 2014 by Olivier Cohen when he was only 26 years old.
- Cuvée Spéciale is crafted by blending older reserve stocks across multiple harvests rather than a single year.
- Olivier Cohen trained with legendary low-intervention winemakers, including Thierry Allemand in Cornas.

## Food pairing

The bright natural acidity and soft, velvety tannins of this low-intervention red allow it to complement savory meats and earthy dishes without overwhelming them. The fresh acidity cuts through richer fats in duck and lamb, while the savory herb notes align beautifully with mushrooms and charcuterie.

## Wine making process

Crafted with minimal intervention from organically and biodynamically farmed old-vine parcels. The grapes undergo whole-cluster maceration for roughly ten days, followed by spontaneous fermentation driven entirely by indigenous yeasts in tank. The wine is aged in stainless steel or fiberglass vessels without chemical additives or temperature adjustments. It combines multiple vintage harvests to establish complexity and balance. Bottling occurs without fining or filtration, and with minimal to no added sulfur dioxide.
