## About this wine

Located on an isolated chalk hill in Montgueux, south of the main Champagne region, the Jacques Lassaigne estate was pioneered by Jacques in the 1960s as one of the first to plant Chardonnay in this specific micro-terroir. In 1999, his son Emmanuel 'Manu' Lassaigne took over the family's 3.5-hectare estate to champion Montgueux's distinct chalk soils. Emmanuel works with low-yield, old-vine micro-parcels to craft artisanal, highly site-expressive sparkling wines.

## Wine making process

Grapes from 9 distinct parcels are gently pressed and spontaneously fermented using indigenous yeasts in stainless steel tanks and neutral oak barrels. Complete malolactic fermentation takes place naturally. No sulfites are added during vinification or blending. Emmanuel utilizes a lower tirage pressure during bottling to achieve a softer mousse, followed by 1 to 5 years of aging on lees. Bottling and disgorgement are performed manually by hand without freezing the bottle neck, and no dosage sugar is added.
