## About this wine

Les Vins Pirouettes is an innovative collective project created by renowned Alsatian natural winemaker Christian Binner. The initiative was established to empower organic and biodynamic grape growers throughout Alsace by enabling them to craft and bottle natural wines in their own cellars under their own names. The 'Eros de Vincent' cuvée is grown and vinified by Vincent Gross at Domaine Gross, combining fruit from sunny limestone slopes in Gueberschwihr and warm sandstone parcels in Rouffach.

## Interesting facts

- Les Vins Pirouettes was founded to prevent organic growers from having to sell top-tier grapes to large commercial cooperatives.
- The cuvée name highlights the specific grower, Vincent Gross of Domaine Gross, distinguishing it from other 'Eros' wines in the collective.
- A 10 to 14 day skin maceration gives this white field blend its distinctive amber color and subtle tea-like tannic grip.

## Food pairing

The wine's gentle tannic structure from 10–14 days of skin contact combines with vibrant Alsatian acidity and aromatic intensity. This unique structure bridges white and red wine pairing logic, allowing it to cut through rich poultry, pork, and bloomy-rind cheeses while easily complementing exotic Asian spices and citrus preparations.

## Wine making process

Hand-harvested grapes are partially destemmed (60-70%) with whole clusters included (30-40%) before undergoing 10 to 14 days of skin-contact maceration. Fermentation takes place spontaneously with native yeasts in tanks without added sulfites or inputs. The wine ages for 6 to 8 months in a combination of traditional large old Alsatian oak foudres and stainless steel tanks. It is bottled unfined, unfiltered, and with no added sulfites.
