## About this wine

Champagne Legras & Haas was founded in 1991 by François and Brigitte Legras in the Grand Cru village of Chouilly, though the Legras family heritage in the village spans over four centuries of grape growing. Today, the estate is managed by their three sons: Olivier, Rémi, and Jérôme Legras. 'Les Visions' is the flagship Blanc de Blancs from the house, crafted from Chardonnay harvested across all 32 family-owned estate parcels in Chouilly to showcase the village's signature chalky energy and floral complexity.

## Interesting facts

- The Legras family has been growing grapes in the Grand Cru village of Chouilly for over 400 years.
- 'Les Visions' is crafted by blending Chardonnay from across all 32 family-owned estate parcels in Chouilly.
- The wine ages on its lees in the cellars for up to four years prior to disgorgement.

## Food pairing

The high acidity and fine effervescence of this Blanc de Blancs cut through rich, fatty, or fried foods cleanly while complementing delicate raw seafood and delicate white fish without overpowering them.

## Wine making process

The grapes are 100% estate-grown Chardonnay from Grand Cru Chouilly vineyards, hand-harvested and gently pressed using only first-press juice (cuvée). Fermentation takes place in temperature-controlled stainless steel tanks, followed by partial or full malolactic fermentation depending on the release base. After aging for 8 months in tank prior to bottling, the wine undergoes secondary bottle fermentation and matures on its lees for 27 to 48 months before disgorgement.
