## About this wine

Azienda Agricola Le Coste was founded in 2004 by Gianmarco Antonuzi and Clémentine Bouveron near Lake Bolsena in Gradoli, northern Lazio. Having honed their craft under natural winemaking icons in Alsace and the Northern Rhône, they returned to Gianmarco's ancestral region to establish a biodynamic sanctuary. Litrozzo Rosato embodies their conviviality ethos, bottled in a distinctive 1-liter format meant for joyous, unpretentious sharing among friends and family.

## Interesting facts

- Litrozzo is a playful Italian term for a 'little liter', packaged exclusively in 1-liter bottles.
- Features a unique co-fermentation of both red and white indigenous grape varieties.
- Vineyards are situated around Lake Bolsena on mineral-rich volcanic soils left unplowed to promote natural flora.

## Food pairing

The electric acidity, light body, and subtle phenolic structure of this volcanic rosé cut through crispy, fried textures and rich savory elements while standing up beautifully to herbal and citrus seasonings. The vibrant fruit profile balances light spices and salty cheeses without overwhelming delicate seafood.

## Wine making process

Crafted from co-fermented indigenous red and white grapes grown on volcanic soils. Red varieties receive direct pressing or minimal skin contact, while white Procanico undergoes a brief infusion. Spontaneous fermentation occurs with ambient yeasts in concrete and stainless steel tanks without temperature control or additives. Aged for approximately eight months in concrete and fiberglass vats before bottling unfiltered, unfined, and without added sulfur dioxide.
