## About this wine

Casa Fèvre was established in 1993 as a pioneering joint venture between legendary French Chablis producer William Fèvre and Chilean entrepreneur Victor Pino Torche. Situated in the Malleco Valley in southern Chile's Araucanía region, the estate sits at the extreme cool-climate frontier of South American viticulture. The Little Quino cuvée comes from the 3-hectare La Golondrina vineyard near Traiguén, planted on reddish volcanic clay soils rich in stones. The area benefits from substantial rainfall, cold Andean nights, and strong volcanic mineral influences, delivering a uniquely energetic Chilean white.

## Interesting facts

- The name Quino comes from the local indigenous Mapuche language, meaning between rivers.

- The vineyards reside on volcanic soils at the extreme southern edge of Chilean viticulture.

## Food pairing

The high, vibrant acidity and crisp citrus profile of this cool-climate Sauvignon Blanc make it a natural match for delicate seafood, raw shellfish, and fresh goat cheese. High-acid dressings like citrus or vinegar harmonize seamlessly, while rich, heavy meats or intensely sweet desserts would completely overwhelm the wine's fresh personality.

## Wine making process

The grapes are 100% hand-harvested in early April. Upon arrival at the winery, they undergo gentle pneumatic pressing followed by a 24-hour static cold settling at low temperatures. Fermentation takes place with indigenous yeasts over approximately 20 days in temperature-controlled stainless steel tanks between 12°C and 14°C. The wine rests on its fine lees in stainless steel vats for several months prior to bottling without any oak maturation, preserving pristine varietal purity, vibrant acidity, and volcanic minerality.
