## About this wine

Founded in Santa Barbara County by college friends Mike Roth and Craig Winchester, Lo-Fi Wines takes inspiration from the musical concept of raw, unpolished recordings. The winery focuses on minimal intervention and highly drinkable, food-friendly wines crafted from organically farmed vineyards like Clos Mullet in Los Alamos. Trousseau, a classic variety native to France's Jura region, is extremely rare in California, making this estate-sourced bottling a distinctive expression of Central Coast viticulture.

## Interesting facts

- Named after the musical term Lo-Fi, valuing raw analog warmth over polished digital perfection.

## Food pairing

The wine's vibrant acidity, light body, and gentle tannins make it exceptionally versatile at the dinner table. It cuts through rich duck and pork fat while echoing earthy mushroom notes, and its low tannin profile pairs gracefully with grilled salmon without creating metallic off-flavors.

## Wine making process

The grapes are 100% destemmed before undergoing primary and secondary fermentation with native wild yeasts and indigenous lactic acid bacteria. Fermentation takes place on skins for approximately two weeks in open vessels prior to gentle pressing. The wine ages for 10 months in neutral French oak barriques and demi-muids with zero artificial additives, enzymes, or pH adjustments. It is bottled unfined and unfiltered with minimal added sulfur dioxide.
