## About this wine

The Louis Jadot Santenay Clos de Malte Rouge 2020 is a 100% Pinot Noir from the Santenay AOC in Burgundy's Côte de Beaune. It is an estate wine from Maison Louis Jadot, a producer with a long history dating back to 1859. The Clos de Malte vineyard, a monopole owned by the Gagey family who direct Jadot, is located at the base of Montagne des Trois Croix, benefiting from specific microclimatic conditions. The 2020 vintage, while warm, allowed this wine to express its inherent elegance and the terroir of Santenay.

## Food pairing

The wine's medium-plus body and fine tannins complement the protein in dishes like lamb and duck, while its vibrant acidity cuts through richer elements. Earthy notes in the wine resonate with mushroom and truffle flavors, and savory elements find a match in game dishes and aged cheeses.

## Wine making process

The Louis Jadot Santenay Clos de Malte Rouge 2020 is produced from 100% Pinot Noir. Grapes are hand-harvested. Fermentation takes place in open vats (wooden or stainless steel) for 3 to 4 weeks, with maceration also lasting 3 to 4 weeks and featuring twice-daily pumping over. The wine is then aged for 12 months in French oak barrels, with about a third being new, and some aging may extend to 18 months in barrels from their own cooperage.
