## About this wine

Laurent Saillard had a career in New York City fine dining, managing Balthazar and co-founding the natural wine bar Ici in Brooklyn, before relocating to France in 2008 to pursue winemaking. He learned viticulture under Loire vigneronne Noëlla Morantin in Pouillé. In 2014, when Catherine Roussel and Didier Barouillet retired from the historic Clos Roche Blanche estate, Saillard acquired a portion of these historic vineyards alongside Julien Pineau. Lucky You Blanc is Saillard's signature white cuvée, crafted from old-vine parcels planted on flint and clay soils over limestone in the Touraine district.

## Interesting facts

- Producer Laurent Saillard managed NYC's Balthazar and co-founded Brooklyn natural wine pioneer Ici before making wine.
- The grapes come from 50+ year old vines at the historic Clos Roche Blanche estate planted in 1973.
- Fermentation is entirely spontaneous with native yeasts, continuing slowly through winter until spring.

## Food pairing

The high natural acidity and mineral texture of this Loire white cut effortlessly through rich fats like butter and goat cheese, while seamlessly complementing fresh seafood and shellfish.

## Wine making process

The grapes are sourced from 1973 plantings in the Clos Roche Blanche vineyard. Harvested by hand, whole clusters are directly pressed into stainless steel tanks. Fermentation occurs spontaneously using indigenous yeasts and progresses slowly through the winter until spring. The wine undergoes six months of aging on fine lees in stainless steel and neutral vats. It is bottled unfined and unfiltered with a minimal addition of approximately 10 ppm sulfur dioxide.
