## About this wine

Lucy Margaux (Lucy M Wines) was established by Anton van Klopper in the Basket Range of the Adelaide Hills, South Australia. Van Klopper, who graduated with first-class honors in oenology from the University of Adelaide, is widely recognized as one of the pioneers of the Australian natural wine movement. The estate operates under strict organic and biodynamic agricultural practices, prioritizing minimal intervention and complete chemical independence in both vineyard and winery.

## Interesting facts

- Winemaker Anton van Klopper distills his own alcohol to clean winery equipment to stay completely chemical-free.
- The wine is fermented and aged entirely in 680-liter ceramic terracotta eggs rather than traditional oak casks.
- Anton van Klopper is regarded as one of the founding figures of the Australian natural wine movement.

## Food pairing

The vibrant acidity and fresh, crunchy fruit profile cut through rich fats in charcuterie and goat cheese while complementing the delicate sweetness of fresh shellfish and seafood.

## Wine making process

The grapes are hand-harvested early in the season from organically farmed young Syrah vines planted in deep red clay over sandstone in Hope Forest. In the cellar, the whole bunches undergo gentle direct pressing in a manual basket press. Fermentation occurs spontaneously driven by indigenous yeast without any additions. The wine is raised entirely on its lees in 680-liter vitrified ceramic terracotta eggs and is bottled unfined, unfiltered, and with zero added sulfur dioxide.
